  • ½ a cup of quinoa
  • 1 cup of mixed vegetables
  • ½ teaspoon of cumin seeds
  • ½ teaspoon of fennel seeds
  • ½ teaspoon of ginger paste
  • ½ teaspoon of garam masala powder
  • 1 tablespoon of ghee
  • Salt to taste
  • 1 sprig of fresh mint or coriander leaves for garnish

How To Prepare

  1. Cook the quinoa according to the package instructions and set it aside.

  • ½ cup of plain or basmati rice
  • ½ cup of lentils (yellow moong dal)
  • 1 tablespoon of ghee
  • ½ teaspoon of cumin seeds
  • ½ teaspoon of mustard seeds
  • ½ teaspoon of cumin powder
  • ½ teaspoon of coriander powder
  • ½ teaspoon of turmeric powder
  • 1 pinch of asafoetida (optional)
  • 2-3 cups of water
  • Salt to taste
  • 1 sprig of fresh mint or coriander leaves for garnish

How To Prepare

  1. Wash the rice and lentils separately and let them soak in water for about 30 minutes.
  2. Heat up the ghee over medium heat in a medium-sized saucepan.
  3. Add the cumin and mustard seeds (and asafoetida, if you are using it) and let them splutter for a few seconds.
  4. Drain the water from the rice and lentils and add them to the pan. Sauté them for 2-3 minutes.
  5. Add the turmeric, cumin, and coriander powder and mix well.
  6. Add the water and bring it to a boil.
  7. Turn the stove to low heat, cover the saucepan, and let it simmer for 20-30 minutes until the rice and lentils are tender. Add more water and simmer longer if needed.
  8. Remove the lid and add the salt to taste. Simmer for a couple more seconds before taking it off the heat.
  9. Plate the khichdi and garnish with coriander or mint leaves.

3. Potato And Spinach Curry

Ingredients

  • 1 medium-sized potato, diced
  • 1 cup of spinach leaves
  • 1 tablespoon ghee
  • ½ teaspoon cumin seeds
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala powder
  • Salt to taste
  • 1 sprig of fresh coriander leaves for garnish

How To Prepare

  1. Heat up the ghee over medium heat in a pan.
  2. Add the cumin seeds and let them splutter for a few seconds.

  • 1 cup of mixed vegetables
  • ¼ cup of red lentils
  • 1 tablespoon ghee
  • ½ teaspoon of cumin powder
  • ½ teaspoon of coriander powder

  • Salt to taste
