1. Steamed Mussels:

Ingredients:

  • Mussels – 4 pounds
  • Olive oil – 2 tbsp
  • Shallots – 2, finely chopped
  • Garlic – 5 cloves
  • Thyme – 1 tbsp, dried
  • Lemon juice – 1 tbsp
  • Chicken broth – 3 cups
  • Butter – 2 tbsp
  • Salt – to taste
  • Red pepper flakes – 1 tsp or more according to taste

How To Make:

  1. Discard broken shells and clean the mussels thoroughly under running water.
  2. Sauté garlic, thyme, and shallots in oil in a 6 quart stockpot and add mussels.
  3. Mix in lemon juice and chicken broth and give a quick mix.
  4. Mix in red pepper flakes, cover the vessel and steam the mixture until mussels are open.
  5. Add salt, and butter, cover again, and steam until mussels soften. Adjust seasoning.
  6. Serve hot.

2. Mussels In White Wine Sauce:

Ingredients:

  • Mussels – 3 cups
  • Dry white wine – 2 cups
  • Garlic – 4 cloves
  • Shallots – 3
  • Mixed herbs – 1 tbsp
  • Butter – 2 tbsp
  • Salt to taste

How To Make:

  1. Rinse mussels thoroughly and keep aside.
  2. Sauté garlic and shallots in 1 tbsp butter until garlic turns golden brown. Mix in herbs and rest of the butter and sauté for a minute more.
  3. Add white wine and simmer for about 7 minutes.
  4. Add mussels, cover, and cook until mussels soften.
  5. Add salt, simmer for a minute more, and serve hot.

3. Mussels In Spicy Tomato Gravy:

Ingredients:

  • Mussels – ½ kg
  • Finely sliced onions – ½ cup
  • Ginger garlic paste – 2 tsp
  • Green chillies – 4, finely chopped
  • Cumin seeds – 1 tsp
  • Tomatoes – 1 cup, finely chopped
  • Garam Masala – 1 tsp
  • Coriander leaves – 1 tbsp
  • Cooking oil – 2 tbsp
  • Salt – to taste

How To Make:

  1. Allow cumin seeds to splutter in heated cooking oil.
  2. Add ginger garlic paste and sauté for a minute.
  3. Toss in onions and green chilies and sauté until onions turn dark brown.
  4. Add tomatoes, cover, and cook until tomatoes turn soft.
  5. Add mussels and cook until mussels become soft.
  6. Add salt to taste. Simmer for a minute more.
  7. Sprinkle garam masala and coriander leaves and give a quick mix.
  8. Serve hot atop rice.

4. Mussels In Chorizo And Tomato Broth:

Ingredients:

  • Chorizo Sausage – 8 oz, cut into 1/3 inch pieces
  • Mussels – 2.5 kg
  • Butter – 2 tbsp
  • Onion – ½ cup, thinly sliced
  • Smoked paprika – 1 tsp
  • Red pepper flakes – 1 tsp
  • Ground black pepper – ½ tsp
  • Garlic cloves – 6 cloves
  • Tomatoes – 2, finely chopped
  • White wine – ½ cup
  • Heavy cream – ½ cup
  • Parsley leaves – as desired

How To Make:

  1. Cook the sausage over medium heat for 6 minutes. Transfer to paper towels to drain excess oil.
  2. Reserve just 1 tbsp fat. Melt in butter with the fat.
  3. Saute onions with red pepper flakes, paprika, and ground black pepper until onions are soft.
  4. Mix in garlic and tomatoes and cook until tomato turns pulpy.
  5. Mix in cream, wine, and parsley. Add the sausage and cook to a boil.
  6. Add mussels and cook, covered, on low heat, until the shells open up.
  7. Serve hot.

Ingredients:

  • Mussels – 2 cups
  • Onion – ½ cup
  • Cooking oil – ¼ cup
  • Miso paste – 1 tsp
  • Garlic – 1 tsp, finely chopped
  • Ginger – 1 tsp, finely chopped
  • Hot chili sauce – 1 tbsp
  • Vegetable broth – 1 ½ cups
  • Any leafy vegetable of your choice [optional]

  1. Saute onions with garlic and ginger for about 3 to 4 minutes. Mix in miso paste, chili sauce, and vegetable broth and cook on high heat for 3 minutes.
  2. Mix in leafy greens and mussels, cover, and steam for 5 minutes or until mussels open up.

  • Green chillies – 6 or more to taste

  • Red wine vinegar – optional, 1 tsp

  1. To prepare the salsa, mix all the ingredients mentioned under salsa. Mix well and refrigerate until you need.
  2. Open mussels and strain the liquid through the sieve into beaten eggs.
  3. Heat oil until piping hot.
  4. Dip mussels in flour and then in egg and add to hot oil slowly.
  5. Deep fry until golden brown.
  6. Serve hot with chilled salsa.

  • Mussels – 2 cups, steamed, shells open

  • Lemon juice – 2 tbsp

Ingredients:

  • Mussels – 2 cups
  • Onions – ½ cup
  • Thyme – 1 tsp
  • Bay leaf – 1
  • Parsley stalks – 1
  • Dry white wine – ½ cup
  • Tomatoes – 3, large, finely chopped
  • Corn flour mixed with water – 1 tbsp
  • Cream – ½ cup
  • Saffron – 3 strands
  • Butter – ¼ cup
  • Black pepper – 1 tbsp
  • Chives – for garnishing

How To Make:

  1. Cook the mussels in a large stockpot filled with water and onions and spices added to it until mussels open up.
  2. Using a slotted spoon, transfer the mussels to a plate. Discard the shells and keep mussels aside.
  3. Adjust the seasoning of water after discarding the spices and onions.
  4. Add tomatoes and cook for 10 minutes. Meanwhile, get the corn flour paste ready.
  5. Mix corn flour in boiling water and cook for a minute or two.
  6. Add the cream and white wine and cook for 5 to 7 minutes.
  7. Add the saffron and let the mixture boil.
  8. Mix in black pepper and butter and mussels and cook for a few more minutes.
  9. Serve hot sprinkled with chives.
